Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add diced beef stew and sear for 5-7 minutes until browned.
  2. Remove beef and add one chopped large onion, sauté for 3-4 minutes until translucent.
  3. Stir in grated carrots and minced garlic, cooking for an additional 3-4 minutes.
  4. Return beef to the pot and add soy sauce, Worcestershire sauce, and ketchup. Let simmer for 2 minutes.
  5. Add curry powder and garam masala, stirring to combine and toast spices for 1 minute.
  6. Pour in 4 cups of beef broth, salt, and black pepper, stirring well to combine.
  7. Bring to a simmer, cover, and let it cook for 1.5 to 2 hours until beef is tender.
  8. Prepare rice according to package instructions.
  9. Once beef is tender, adjust seasoning and stir in 1/2 cup of coconut milk if desired.
  10. Serve over rice, optionally adding peas for brightness.
