Ingredients

For the Skewers
  • 2 lbs Chicken Breast Diced
  • 1 cup Pineapple Chunks Fresh
  • 1 tbsp Honey Or agave syrup for vegan option
  • 1 tbsp Soy Sauce Or tamari for gluten-free
  • 2 cloves Garlic Minced
For the Vegetables
  • 1 cup Bell Peppers Chopped
  • 1 cup Onions Chopped
  • 1 cup Zucchini Sliced
  • 1 cup Cherry Tomatoes Whole
  • Chili Flakes/Jalapeño Optional for heat

Equipment

  • Grill
  • Mixing bowl
  • Wooden skewers

Method

Steps to Prepare
  1. In a mixing bowl, combine diced chicken breast, honey, soy sauce, and minced garlic. Stir well to ensure the chicken is thoroughly coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor.
  2. While the chicken marinates, soak your wooden skewers in water for about 30 minutes to prevent burning on the grill. Once soaked, thread alternating chunks of marinated chicken and fresh pineapple onto them, adding vegetables for color.
  3. Preheat your grill to medium-high heat, approximately 400°F (200°C).
  4. Once your grill is hot, place the Chicken and Pineapple Skewers on it. Cook for 10 to 15 minutes, turning them every few minutes.
  5. After grilling, let the skewers rest for a few minutes before serving them alongside your choice of sides.
