- Preheat your grill or a large skillet to medium-high heat, around 375°F (190°C).
- In a large mixing bowl, combine the ground lamb, onion, garlic, cumin, coriander, paprika, cinnamon, black pepper, salt, and parsley. Mix until just combined.
- Shape the mixture into small oval patties or onto skewers. Chill in the fridge for 15 minutes.
- Whisk together tahini, lemon juice, garlic, salt, and warm water in a bowl until smooth and creamy.
- Cook the kofta for 6-7 minutes on each side or until cooked through.
- Serve hot in pita or on a plate, drizzled with tahini sauce.
