Ingredients
  

For the Kofta
  • 1 lb Ground Lamb Substitute with ground beef (85% lean) if needed.
  • 1 medium Onion Finely chopped; shallots or green onions can be used as alternatives.
  • 2 cloves Garlic Minced; garlic powder can be substituted.
  • 1 tsp Cumin
  • 1 tsp Coriander Additional cumin can be used if unavailable.
  • 1 tsp Paprika Smoked paprika can deepen the flavor.
  • 1/2 tsp Cinnamon Pumpkin pie spice can be a substitute.
  • to taste Black Pepper
  • to taste Salt
  • 1/4 cup Fresh Parsley Chopped; fresh mint can be an alternative.
For the Tahini Sauce
  • 1/2 cup Tahini Sunflower seed butter can be used for a nut-free option.
  • 2 tbsp Lemon Juice Fresh lemon juice is best.
  • 1/4 cup Water Warm water to adjust the sauce's consistency.

Method
 

Cooking Instructions
  1. Preheat your grill or a large skillet to medium-high heat, around 375°F (190°C).
  2. In a large mixing bowl, combine the ground lamb, onion, garlic, cumin, coriander, paprika, cinnamon, black pepper, salt, and parsley. Mix until just combined.
  3. Shape the mixture into small oval patties or onto skewers. Chill in the fridge for 15 minutes.
  4. Whisk together tahini, lemon juice, garlic, salt, and warm water in a bowl until smooth and creamy.
  5. Cook the kofta for 6-7 minutes on each side or until cooked through.
  6. Serve hot in pita or on a plate, drizzled with tahini sauce.
