Ingredients
  

For the Wraps
  • 6 leaves Collard Green Leaves Substitute with cabbage or butter lettuce if preferred.
  • 200 grams Shirataki Noodles Rinse and drain thoroughly before using.
For the Filling
  • 300 grams Shrimp Deveined and peeled.
  • 1 cup Cabbage Shredded, can use red or green.
  • 1 medium Carrots Shredded, optional for low-carb.
  • 1 medium Cucumber Cut into thin matchsticks.
  • 2 stalks Green Onions Thinly sliced.
  • 1/4 cup Fresh Cilantro
  • 1/4 cup Fresh Mint
  • 2 cloves Garlic Minced.
  • 1 medium Jalapeño Sliced, remove ribs and seeds for less heat.
For the Peanut Sauce
  • 1/2 cup Keto Peanut Butter Ensure it’s sugar-free.
  • 2 tablespoons Soy Sauce Low-sodium preferred.
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Lime Juice Freshly squeezed.
  • 1 tablespoon Granular Erythritol Adjust to taste.

Method
 

Preparation Steps
  1. Prepare Collard Greens: Bring a large pot of water to a boil. Submerge the collard green leaves for 15 seconds, then remove and dry completely.
  2. Cook Noodles: Rinse and drain the shirataki noodles. Sauté minced garlic in sesame oil, then add the noodles and sauté for 5 minutes.
  3. Make Peanut Sauce: Combine peanut butter, soy sauce, rice vinegar, lime juice, and erythritol in a bowl and whisk until smooth.
  4. Assemble Rolls: Lay a collard green leaf flat, add peanut sauce, noodles, shrimp, cabbage, cucumber, and jalapeño. Fold and roll tightly.
  5. Serve: Slice the rolls in half and serve with extra peanut sauce on the side.
