  • 2 medium Cucumbers fresh, keep skin on
  • 1/4 cup Chopped Parsley can substitute with dill
For the Dressing
  • 1/4 cup Lemon Juice freshly squeezed
  • 1 tablespoon Lemon Zest fresh
  • 1/4 cup Olive Oil or avocado oil
  • 1/2 cup Greek Yogurt or dairy-free yogurt
  • 1 clove Minced Garlic adjust to taste

Preparation Steps

  4. In a large bowl, combine cooled pasta, cucumbers, and chopped parsley. Toss gently.
