Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather all your ingredients and equipment, including a large oven-safe skillet.
  2. Season the chicken thighs generously with salt, pepper, and fresh thyme on both sides.
  3. In a preheated skillet, melt a tablespoon of butter over medium-high heat. Sear the chicken thighs skin-side down for about 5-7 minutes.
  4. Flip the chicken thighs and add baby potatoes and asparagus. Pour lemon juice over the mixture.
  5. Transfer the skillet to the oven and bake for 25-30 minutes until chicken is cooked through.
  6. During the last 5 minutes of cooking, stir in the sweet peas.
  7. Let the chicken rest for 5 minutes after baking, then drizzle with lemon butter from the skillet.
