  • 1 tsp Black Pepper switch to white pepper for a milder taste
  • 1 cup Broccolini regular broccoli florets are an excellent substitute
For the Egg Mixture
  • 1 cup Goat Cheddar Cheese regular cheddar or feta can create a different flavor profile
  • 6 large Large Eggs consider egg substitutes for a vegan option
  • 1 cup Lactose-Free Cottage Cheese regular cottage cheese can also be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 baking pan with olive oil.
  2. In a large skillet, heat olive oil over medium heat, add the sausage, and cook for 8-10 minutes until browned. Stir in sage and maple syrup in the last 2 minutes.
  3. Remove the sausage, toss in potatoes, shallots, salt, paprika, and black pepper, and sauté for 7-8 minutes. Add broccolini and cook for another 4-5 minutes until tender.
  4. Spread the sausage and veggies in the prepared dish.
  5. In a bowl, whisk together eggs, cottage cheese, salt, and black pepper. Pour over the sausage and veggie mixture.
  6. Sprinkle goat cheddar cheese on top, cover with foil, and bake for 25 minutes. Remove foil and bake for 20 more minutes until golden.
  7. Let cool for 30 minutes, then slice and serve warm.
