- Preheat your oven to 375°F (190°C) and grease a 9x13 baking pan with olive oil.
- In a large skillet, heat olive oil over medium heat, add the sausage, and cook for 8-10 minutes until browned. Stir in sage and maple syrup in the last 2 minutes.
- Remove the sausage, toss in potatoes, shallots, salt, paprika, and black pepper, and sauté for 7-8 minutes. Add broccolini and cook for another 4-5 minutes until tender.
- Spread the sausage and veggies in the prepared dish.
- In a bowl, whisk together eggs, cottage cheese, salt, and black pepper. Pour over the sausage and veggie mixture.
- Sprinkle goat cheddar cheese on top, cover with foil, and bake for 25 minutes. Remove foil and bake for 20 more minutes until golden.
- Let cool for 30 minutes, then slice and serve warm.
