Method

Cooking Steps
  1. Begin by seasoning the chicken breasts generously with salt and freshly cracked pepper on both sides. Lightly coat them in all-purpose flour, shaking off any excess.
  2. In a large skillet, combine olive oil and unsalted butter over medium heat. Allow the mixture to heat until bubbling, about 2 minutes.
  3. Add the seasoned chicken breasts to the skillet, cooking each piece for about 4-5 minutes per side until golden brown. Transfer to a plate and keep warm.
  4. Add minced garlic and sauté for about 1 minute until fragrant. Pour in chicken stock, scraping browned bits from the pan.
  5. Reduce heat to low, stir in heavy cream and Parmesan cheese until melted and smooth. Simmer for 2-3 minutes, then incorporate chili flakes, oregano, and thyme.
  6. Gently fold in sundried tomatoes and nestle the chicken back into the sauce. Simmer for about 5 minutes.
  7. Turn off the heat and top with fresh basil leaves before serving warm over pasta or rice.
