- Preheat your oven to 400°F (200°C). Prepare a large baking sheet lined with parchment paper.
- In a medium skillet, heat olive oil over medium heat, add chopped spinach, and sauté for about 3-4 minutes.
- Combine wilted spinach with ricotta, Parmesan, garlic powder, salt, and pepper in a mixing bowl.
- Unwrap thawed puff pastry sheets, cut into 4-6 equal squares.
- Place 1-2 tablespoons of the filling in the center of each pastry square, fold and seal edges.
- Whisk egg for egg wash and coat the tops of each filled pastry.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Let cool for 5 minutes on a wire rack before serving warm.
