Step-by-Step Instructions
  1. Begin by slicing the chicken breasts into uniform pieces, ensuring even cooking throughout. Next, chop the zucchini, red bell pepper, and red onion into bite-sized pieces. Halve the cherry tomatoes.
  2. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat until it shimmers, about 1-2 minutes.
  3. Add the prepped chicken pieces to the skillet and sauté for 5-7 minutes until golden brown and cooked through.
  4. Once the chicken is cooked, toss in the zucchini, red bell pepper, and red onion, cooking for about 3-4 minutes.
  5. Stir in the minced garlic, cherry tomatoes, and sun-dried tomatoes, cooking for about 1 minute until fragrant.
  6. Sprinkle in the dried oregano, basil, and thyme, allowing to cook for an additional 2 minutes.
  7. To finish, stir in the Kalamata olives and fresh lemon juice, cooking for another minute.
