  • 1 cup Cherry Tomatoes or diced regular tomatoes
  • 1/2 cup Sun-Dried Tomatoes or fresh tomatoes
  • 1/3 cup Kalamata Olives or green olives
  • 1/2 cup Feta Cheese or goat cheese
  • 1 tablespoon Fresh Herbs oregano, basil, thyme
  • 2 tablespoons Lemon Juice or lime juice
Optional Toppings
  • 2 tablespoons Fresh Parsley for garnish
  • 1 teaspoon Red Pepper Flakes to taste

Method
 

Step‑by‑Step Instructions
  1. Prep all ingredients including vegetables and cut the chicken into bite-sized pieces.
  2. Heat olive oil in a skillet over medium-high heat, season chicken and cook until golden brown.
  3. In the same skillet, sauté onions and garlic, then add zucchini and red bell pepper until tender.
  4. Stir in cherry and sun-dried tomatoes, then return chicken to skillet and mix well.
  5. Finish with lemon juice, olives, and feta cheese; garnish with parsley before serving.
