Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Wash and slice the zucchini into thin rounds, about 1/4 inch thick. Arrange in an even layer at the bottom of the greased baking dish.
  3. In a medium-sized mixing bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Whisk until well combined.
  4. Add the chicken breasts to the bowl and coat each piece thoroughly with the seasoned oil.
  5. Place the seasoned chicken on top of the layered zucchini in the baking dish.
  6. Sprinkle grated Parmesan cheese evenly over the chicken breasts.
  7. Bake in the preheated oven for 35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before serving.
