- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- Wash and slice the zucchini into thin rounds, about 1/4 inch thick. Arrange in an even layer at the bottom of the greased baking dish.
- In a medium-sized mixing bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Whisk until well combined.
- Add the chicken breasts to the bowl and coat each piece thoroughly with the seasoned oil.
- Place the seasoned chicken on top of the layered zucchini in the baking dish.
- Sprinkle grated Parmesan cheese evenly over the chicken breasts.
- Bake in the preheated oven for 35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before serving.
