- Preheat your oven to 375°F (190°C). Gather a sharp knife or mandoline, a large mixing bowl, and a baking dish.
- Slice the russet potatoes evenly into thin rounds, about 1/8 inch thick.
- In a large mixing bowl, combine the sliced potatoes with olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until evenly coated.
- Layer half of the seasoned potato mixture into your baking dish and sprinkle half of the crumbled feta cheese on top. Repeat with the remaining potatoes and feta.
