  2. Slice the russet potatoes evenly into thin rounds, about 1/8 inch thick.
  3. In a large mixing bowl, combine the sliced potatoes with olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until evenly coated.
  4. Layer half of the seasoned potato mixture into your baking dish and sprinkle half of the crumbled feta cheese on top. Repeat with the remaining potatoes and feta.

  6. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
