- Preheat your oven to 350°F (175°C) and grease mini bundt pans with Baker's Joy or shortening and dust them lightly with cocoa powder.
- In a medium bowl, combine all-purpose flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt. Whisk until well blended.
- In a large bowl, whisk together milk, oil, eggs, and vanilla extract until smooth. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined.
- Slowly stir in hot coffee into the batter until combined.
- Fill each mini bundt pan about 2/3 full with cake batter.
- Bake for 22-26 minutes, or until a toothpick inserted comes out clean.
- Remove from oven and cool for 10 minutes in the pans before transferring to a wire rack.
- Prepare ganache by microwaving condensed milk and chocolate chips together until melted and smooth. Allow to cool slightly before drizzling over the cakes.
