  • 2 sheets Gelatin Bloom strength of 200
  • 1 teaspoon Vanilla Extract Madagascar Bourbon preferred
  • 1 cup Whipping Cream At least 30% fat
  • 8 ounces Cream Cheese Philadelphia brand preferred
For the Meringue Topping
  • 3 large Egg Whites Room temperature
  • 1 cup Icing Sugar Can be made at home
For Decoration
  • Freeze-Dried Raspberries Optional
  • Red Food Color Optional

Method
 

Preparation Steps
  1. Make the Oreo crust by processing Oreo cookies into fine crumbs and mixing them with heavy cream. Press into the bottom of a cake ring and refrigerate.
  2. Prepare raspberry puree by cooking fresh raspberries with sugar until dissolved. Soak gelatin sheets in cold water.
  3. Beat cream cheese until smooth, then mix in raspberry puree and food coloring. Fold in whipped cream and chopped Oreo crumbs.
  4. Assemble the cheesecake by pouring the filling over the crust, smoothing the top, and refrigerating for 5-6 hours or overnight.
  5. Make meringue by whisking egg whites until soft peaks form, then gradually adding sugar and icing sugar. Pipe meringue and bake at 200°F for 1.5 to 2 hours.
  6. Decorate the cheesecake with fresh raspberries and meringue strips, then serve chilled.
