Step-by-Step Instructions
  1. Begin by chopping the onion, garlic, bell pepper, carrot, and spinach. Set aside the spinach last to keep it fresh.
  2. Heat 1 tablespoon of olive oil in your large pot over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes.
  3. Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until brown.
  4. Stir in the uncooked pasta, beef broth, and all your chopped veggies except the spinach.
  5. Bring the mixture to a boil on high heat, then reduce to a gentle simmer. Cover and cook for approximately 25-30 minutes.
  6. Once the pasta reaches the perfect doneness, stir in the fresh spinach. Cover the pot again and let it sit for about 5 minutes off the heat.
  7. Mix everything well before serving it warm, garnishing with freshly grated parmesan cheese and extra herbs if desired.
