- Begin by chopping the onion, garlic, bell pepper, carrot, and spinach. Set aside the spinach last to keep it fresh.
- Heat 1 tablespoon of olive oil in your large pot over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes.
- Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until brown.
- Stir in the uncooked pasta, beef broth, and all your chopped veggies except the spinach.
