- In a mixing bowl, combine 1 and 1/2 cups of all-purpose flour with 1/2 cup of granulated sugar and 1/2 cup of softened butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Press into a greased 9x9-inch baking pan.
- In a separate bowl, beat 16oz of softened cream cheese with 1/2 cup of sugar until smooth and creamy, about 2-3 minutes. Add in 2 large eggs and 1 teaspoon of vanilla extract, mixing until fully incorporated.
- Pour the cheesecake mixture over the crust and spread evenly. Layer sliced fresh peaches on top.
- Preheat your oven to 350°F (180°C). Bake for 30-35 minutes, until edges are golden brown and filling is set.
- Let the bars cool in the oven for about 30 minutes to prevent cracks.
- Refrigerate for at least 2 hours, slice into squares, and serve cold.
