Preparation Steps
- Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
- Pat the whole chicken dry using paper towels.
- In a medium bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, cumin, salt, and black pepper.
- Rub the spice mixture generously over the chicken, ensuring to coat it well.
- Place the seasoned chicken in the preheated oven and roast for 1 hour and 15 minutes to 1 hour and 30 minutes.
- Remove the chicken from the oven and allow it to rest for 10-15 minutes.
- In a blender, combine the mayonnaise, cilantro, aji amarillo paste, fresh garlic, queso fresco, lime juice, jalapeno, and water. Blend until smooth.
- Taste your Aji Verde and adjust seasoning as desired.
