- Prepare the Marinade: In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, and salt and pepper. Whisk until smooth. Coat the sirloin steak in this marinade and marinate for at least 30 minutes.
- Make the Tzatziki Sauce: Mix Greek yogurt with grated cucumber, lemon juice, minced garlic, fresh dill, and salt and pepper until well combined. Refrigerate for at least 20 minutes.
- Whisk the Vinaigrette: In a small bowl, whisk olive oil, lemon juice, honey, minced garlic, and dried oregano. Adjust seasoning with salt and pepper.
- Cook the Steak: Heat a skillet over medium-high heat. Cook marinated steak for 4-5 minutes on each side for medium-rare. Let it rest before slicing.
- Assemble the Bowl: Layer cooked grains, sliced steak, cherry tomatoes, cucumber, red onion, and roasted chickpeas. Drizzle with tzatziki and vinaigrette.
