Ingredients
  

For the Steak
  • 1 lbs Sirloin Steak Main protein source
  • 1/4 cup Olive Oil Can substitute with avocado oil
  • 4 cloves Garlic Minced
  • 2 tablespoons Lemon Juice Can substitute with vinegar
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Dried Thyme
  • To taste Salt
  • To taste Black Pepper
For the Bowl Base
  • 4 cups Cooked Grains (Brown Rice/Quinoa/Cauliflower Rice) Cauliflower rice is a low-carb option
  • 1 cup Roasted Chickpeas Optional
For the Fresh Toppings
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 medium Red Onion Can substitute with green onions
  • 1/2 cup Kalamata Olives Can substitute with green olives
  • 1/2 cup Feta Cheese Optional, can use dairy-free cheese
  • 1/4 cup Fresh Herbs (Parsley/Dill) Can substitute with basil or mint
For the Tzatziki
  • 1 cup Greek Yogurt Can use coconut yogurt for dairy-free
  • 1 medium Grated Cucumber
  • 1 tablespoon Lemon Juice
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Dill
  • To taste Salt
  • To taste Black Pepper
For the Vinaigrette
  • 3 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey Optional
  • 1 clove Garlic Minced
  • 1 teaspoon Dried Oregano

Method
 

Preparation
  1. Prepare the Marinade: In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, and salt and pepper. Whisk until smooth. Coat the sirloin steak in this marinade and marinate for at least 30 minutes.
  2. Make the Tzatziki Sauce: Mix Greek yogurt with grated cucumber, lemon juice, minced garlic, fresh dill, and salt and pepper until well combined. Refrigerate for at least 20 minutes.
  3. Whisk the Vinaigrette: In a small bowl, whisk olive oil, lemon juice, honey, minced garlic, and dried oregano. Adjust seasoning with salt and pepper.
  4. Cook the Steak: Heat a skillet over medium-high heat. Cook marinated steak for 4-5 minutes on each side for medium-rare. Let it rest before slicing.
  5. Assemble the Bowl: Layer cooked grains, sliced steak, cherry tomatoes, cucumber, red onion, and roasted chickpeas. Drizzle with tzatziki and vinaigrette.
