For the Squid
  • 1 pound Fresh Squid Small (4-6 inches) recommended
For the Marinade
  • 2 tablespoons Olive Oil High-quality oil
  • 2 cloves Garlic Freshly minced
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper Freshly ground

Method
 

Preparation
  1. Start by cleaning the squid if it is whole; remove the head, innards, and skin. Rinse well under cold water and pat dry with paper towels.
  2. Score the surface in a crisscross pattern about 1/4 inch deep.
  3. In a large bowl, toss the squid gently with olive oil, minced garlic, salt, pepper, and lemon juice.
  4. Let the squid marinate for no more than 10 minutes.
  5. Preheat your grill or cast-iron pan to high heat, about 400°F to 450°F.
  6. Carefully place the marinated squid on the hot grill and grill for 90 seconds to 2 minutes per side.
  7. Transfer cooked squid to warmed plates and serve immediately.
