Preparation
- Start by cleaning the squid if it is whole; remove the head, innards, and skin. Rinse well under cold water and pat dry with paper towels.
- Score the surface in a crisscross pattern about 1/4 inch deep.
- In a large bowl, toss the squid gently with olive oil, minced garlic, salt, pepper, and lemon juice.
- Let the squid marinate for no more than 10 minutes.
- Preheat your grill or cast-iron pan to high heat, about 400°F to 450°F.
- Carefully place the marinated squid on the hot grill and grill for 90 seconds to 2 minutes per side.
- Transfer cooked squid to warmed plates and serve immediately.
