Step-by-Step Instructions
  1. Begin by washing the cucumbers and cherry tomatoes under cold water. Use a sharp knife to thinly slice the cucumbers and red onion, and halve the cherry tomatoes for even sweetness. Roughly chop a handful of fresh basil to release its fragrant oils.
  2. In a large mixing bowl, combine all the prepared vegetables: cucumbers, cherry tomatoes, red onion, and basil. Gently toss them together.
  3. In a small bowl, whisk together extra virgin olive oil and red wine vinegar, adding a pinch of salt and freshly ground black pepper to taste.
  4. Pour the dressing over the mixed vegetables in the large bowl and toss gently to coat.
