  • 1 tbsp Fresh Thyme or Rosemary Feel free to experiment with other herbs you love.
  • 1/2 cup Crushed Walnuts or Pecans These add crunch and richness for that extra flair.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel and slice the large sweet potatoes into even ½-inch rounds.
  3. Drizzle the sweet potato rounds with olive oil and add salt, black pepper, garlic powder, and smoked paprika. Toss to coat.
  4. Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  5. Once roasted, drizzle the sweet potatoes with honey, crumble feta cheese over the top, and finish with fresh thyme or rosemary.
