- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel and slice the large sweet potatoes into even ½-inch rounds.
- Drizzle the sweet potato rounds with olive oil and add salt, black pepper, garlic powder, and smoked paprika. Toss to coat.
- Arrange the seasoned sweet potato rounds in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
- Once roasted, drizzle the sweet potatoes with honey, crumble feta cheese over the top, and finish with fresh thyme or rosemary.
