  • 2 cloves Garlic Minced, garlic powder can be used
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil Can use Italian seasoning
  • to taste Salt
  • to taste Pepper
For Garnish
  • 1/4 cup Fresh Parsley Chopped
  • 1/4 cup Grated Parmesan Cheese Optional, nutritional yeast as dairy-free alternative

Method
 

Step-by-Step Instructions
  1. Boil Pasta: Start by bringing a large pot of salted water to a boil over high heat. Once boiling, add your choice of pasta. Cook for about 8-10 minutes until al dente. Drain and set aside.
  2. Heat Oil: In a large skillet, drizzle in 2 tablespoons of olive oil over medium heat. Allow the oil to warm until shimmering.
  3. Sauté Sausages: Add sliced chicken sausages to the skillet. Sauté for about 5-7 minutes until browned. Remove and set aside.
  4. Add Zucchini: In the same skillet, toss in diced zucchini and sauté for 3-4 minutes.
  5. Incorporate Garlic and Tomatoes: Add minced garlic and halved cherry tomatoes to the skillet. Sauté for an additional 3-5 minutes.
  6. Season Mixture: Sprinkle in dried oregano and basil, along with salt and pepper. Stir to combine all flavors.
  7. Combine with Pasta: Return cooked pasta and sausages to the skillet. Toss everything together.
  8. Warm Through: Heat the mixture for another 2-3 minutes, stirring occasionally.
  9. Garnish and Serve: Garnish with fresh parsley and optional parmesan cheese. Serve immediately.
