Ingredients
  

For the Marinade
  • 1/4 cup Extra Virgin Olive Oil substitute with avocado oil if needed
  • 2 tablespoons Freshly Squeezed Lemon Juice use lime juice as an alternative
  • 3 cloves Garlic (minced) fresh garlic is preferred
  • 1/4 cup Fresh Parsley (chopped) substitute with cilantro if desired
  • 1 teaspoon Dried Oregano can use Italian seasoning
  • 1/2 teaspoon Red Pepper Flakes optional
  • to taste Salt & Black Pepper seasoning to enhance flavor
For the Skewers
  • 1 pound Large Shrimp (peeled and deveined) substitute with firm fish if needed
  • 1 pound Large Sea Scallops can use more shrimp or fish
  • 1 large Red Bell Pepper swap for yellow or green bell pepper as desired
  • 1 large Green Bell Pepper any bell pepper variety works
  • 1 medium Red Onion substitute with yellow onion or shallots if preferred

Method
 

Step-by-Step Instructions
  1. Soak the wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a mixing bowl, whisk together the marinade ingredients.
  3. Combine shrimp, scallops, bell peppers, and onion in a bowl and pour three-quarters of marinade over. Toss and marinate for 15-20 minutes.
  4. Thread the marinated seafood and vegetables onto the soaked skewers, alternating ingredients.
  5. Preheat the grill to medium-high heat and oil the grates.
  6. Grill skewers for 3-4 minutes on each side, basting with reserved marinade in the last minute.
  7. Remove from grill, let rest, and serve with sides of choice.
