- Cook the Noodles: Prepare the dried flat rice noodles following the package instructions. Boil water, cook until tender but firm (6-8 minutes), drain, and rinse briefly under cold water.
- Stir-fry the Onions: Heat cooking oil in a large wok over medium-high heat. Add sliced brown onion and spring onions; stir for 2-3 minutes until fragrant and slightly softened.
- Add the Beef: Add the marinated beef to the wok and stir-fry for 3-5 minutes until browned and the marinade has thickened.
- Combine Noodles and Sauces: Add the pre-cooked noodles, dark soy sauce, oyster sauce, and additional light soy sauce to the wok. Toss gently for 2-3 minutes to combine.
- Add Bean Sprouts and Finish: In the last minute, toss in the bean sprouts and drizzle with sesame oil. Stir-fry for an additional 1-2 minutes until everything is hot.
