For the Stir-fry
  • 2 tablespoons Cooking Oil High smoke point oils (like canola) are recommended.
  • 200 grams Dried Flat Rice Noodles Can be replaced with egg noodles if desired.
  • 1 medium Brown Onion Yellow onion can be used as a substitute.
  • 2 stalks Spring Onions (cut into batons) Can replace with chives.
For the Flavor Boosters
  • 1 tablespoon Dark Soy Sauce Omit or use light sauce for a lighter dish.
  • 2 tablespoons Oyster Sauce Vegetarian oyster sauce or mushroom sauce can be used as a substitute.
  • 100 grams Bean Sprouts Alternatively, use shredded cabbage.
  • 1 tablespoon Sesame Oil Can replace with olive oil but flavor will differ.

Cooking Instructions
  1. Marinate the Beef: In a mixing bowl, combine freshly minced garlic, Shaoxing wine, light soy sauce, cornflour, white sugar, and bicarbonate of soda. Toss the sliced beef in this mixture thoroughly. Set aside to marinate for at least 30 minutes.
  2. Cook the Noodles: Prepare the dried flat rice noodles following the package instructions. Boil water, cook until tender but firm (6-8 minutes), drain, and rinse briefly under cold water.
  3. Stir-fry the Onions: Heat cooking oil in a large wok over medium-high heat. Add sliced brown onion and spring onions; stir for 2-3 minutes until fragrant and slightly softened.
  4. Add the Beef: Add the marinated beef to the wok and stir-fry for 3-5 minutes until browned and the marinade has thickened.
  5. Combine Noodles and Sauces: Add the pre-cooked noodles, dark soy sauce, oyster sauce, and additional light soy sauce to the wok. Toss gently for 2-3 minutes to combine.
  6. Add Bean Sprouts and Finish: In the last minute, toss in the bean sprouts and drizzle with sesame oil. Stir-fry for an additional 1-2 minutes until everything is hot.
  7. Serve and Enjoy: Remove from heat, serve immediately garnished with extra spring onions if desired. Enjoy your meal!
