Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and tools.
  2. Peel sweet potatoes and slice them into thin 1/8 inch rounds.
  3. Wash and chop kale into bite-sized pieces. Sauté in a skillet for 5-7 minutes until wilted.
  4. Grease the bottom and sides of the baking dish with olive oil.
  5. Layer sweet potato slices, sautéed kale, heavy cream, and Gruyère cheese in the baking dish.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Uncover and bake for an additional 20-25 minutes until the top is golden brown.
  8. Let the gratin cool for about 10 minutes before serving.
