Step-by-Step Instructions
  1. In a mixing bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of fresh lemon juice, 3 minced garlic cloves, and 2 tablespoons of chopped fresh parsley. Add in 1 teaspoon of dried oregano, 1/2 teaspoon of paprika, and season with 1/2 teaspoon each of salt and black pepper. For those who like a little heat, include 1/2 teaspoon of crushed red pepper. Mix until well combined.
  2. Add 1 pound of jumbo shrimp to the marinade in the bowl. Toss the shrimp gently to coat completely. Cover the bowl and let marinate for 10 to 15 minutes.
  3. Preheat your grill or grill pan to medium-high heat at around 400°F to 450°F.
  4. Once marinated, thread the shrimp onto skewers, leaving space between each for even cooking.
  5. Place the skewered shrimp on the preheated grill, cooking for approximately 2 to 3 minutes per side.
  6. Optionally, brush the shrimp with any remaining marinade while grilling for added flavor.
  7. Once cooked through, remove from the grill and serve immediately with fresh lemon wedges.
