- In a mixing bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of fresh lemon juice, 3 minced garlic cloves, and 2 tablespoons of chopped fresh parsley. Add in 1 teaspoon of dried oregano, 1/2 teaspoon of paprika, and season with 1/2 teaspoon each of salt and black pepper. For those who like a little heat, include 1/2 teaspoon of crushed red pepper. Mix until well combined.
- Add 1 pound of jumbo shrimp to the marinade in the bowl. Toss the shrimp gently to coat completely. Cover the bowl and let marinate for 10 to 15 minutes.
- Preheat your grill or grill pan to medium-high heat at around 400°F to 450°F.
- Once marinated, thread the shrimp onto skewers, leaving space between each for even cooking.
- Place the skewered shrimp on the preheated grill, cooking for approximately 2 to 3 minutes per side.
