Step‑by‑Step Instructions for Blackened Corn
  1. In a small bowl, mix together salt, black pepper, smoked paprika, onion powder, and garlic powder until well combined.
  2. Spread corn kernels out on paper towels and pat them lightly to dry.
  3. Place a cast iron skillet over medium-high heat and add olive oil and butter. Allow to heat until shimmering.
  4. Pour the prepared corn into the hot skillet and sprinkle the seasoning mixture evenly over the top. Stir to coat.
  5. Spread corn evenly in the skillet and press down with a spatula. Cook undisturbed for 2-3 minutes.
  6. Stir gently and press down again, cooking for another 3-4 minutes until corn is tender and caramelized.
  7. Remove from heat and let rest for a minute. Garnish with freshly chopped herbs if desired.
