For the Sauce
  • 2 tablespoons corn flour (corn starch) sweet potato starch can be an alternative
  • 1 tablespoon Chinese dark vinegar (optional) balsamic vinegar can work
  • 1 tablespoon Chinese chilli oil (optional) adjust to taste
For the Noodles and Garnish
  • 8 ounces vermicelli noodles can substitute with angel hair pasta or rice noodles
  • 2 spring onions chopped scallions or chives can substitute

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of oil in a large saucepan over medium heat until shimmering. Add 1 pound of ground beef and cook until browned, about 5-7 minutes.
  2. Stir in 2 tablespoons of grated ginger and 4 tablespoons of soy sauce, and fry for about 30 seconds until fragrant.
  3. Pour in 1 cup of water and sprinkle in 1 teaspoon of white pepper powder. Cover and let simmer for 10 minutes.
  4. In a pot, boil salted water and cook 8 ounces of vermicelli noodles according to package instructions (3-4 minutes). Strain and set aside.
  5. Mix 2 tablespoons of corn flour with ½ cup of water. Pour into the simmering sauce and stir until thickened (1-2 minutes).
  6. Toss in the cooked noodles, mixing well with the sauce. Serve in bowls, garnishing with chopped spring onions.
