Step-by-Step Instructions for BBQ Boneless Chicken Thighs
  1. Begin by patting the boneless skinless chicken thighs dry with paper towels. Season both sides with kosher salt and pepper.
  2. In a mixing bowl, combine half of your BBQ sauce with olive oil and water. Pour over the seasoned chicken and marinate for at least 30 minutes.
  3. Preheat your grill to a medium temperature (350ºF to 375ºF) and lightly oil the grates.
  4. Place the marinated chicken thighs on the grates. Grill for 3-4 minutes, then flip and grill the other side for an additional 4 minutes.
  5. Lower one burner of the grill to low, baste the chicken with reserved BBQ sauce, and let cook for another 3-4 minutes. Check for doneness at 170-175°F.
  6. Transfer the grilled chicken thighs to a platter and let rest for 2-3 minutes before serving with extra BBQ sauce.
