Ingredients
  

For the Kebabs
  • 1 lb Ground Beef 90% lean recommended
  • 1 medium Onion Grated
  • 3 cloves Garlic Fresh
  • 1/4 cup Parsley Chopped; cilantro can substitute
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1/2 tsp Allspice or Cinnamon Optional
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive Oil For grilling
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Low-fat optional
  • 1/2 cup Cucumber Grated and squeezed dry
  • 2 tbsp Mint or Dill Fresh; dried can be used
  • 1 tbsp Lemon Juice

Method
 

Preparation
  1. Finely chop the onion, garlic, and parsley using a food processor until minced.
  2. In a mixing bowl, combine minced onion, garlic, parsley, ground beef, cumin, coriander, salt, and pepper. Mix until fully incorporated.
  3. Shape the meat mixture into oval patties around skewers.
  4. Preheat a grill pan over medium-high heat for 5 minutes, brushing with olive oil.
  5. Cook the kebabs for approximately 10 minutes, turning every few minutes until browned.
  6. Whisk together Greek yogurt, grated cucumber, minced garlic, lemon juice, and herbs for the tzatziki. Season with salt and refrigerate.
  7. Serve kebabs with tzatziki, warm pita, and fresh vegetables.
