  1. In a mason jar, combine avocado oil, lime juice, chili powder, salt, garlic powder, cumin, and cayenne pepper. Shake or blend until well combined. Marinate chicken in the mixture and refrigerate for at least 2 hours.
  2. Preheat your Blackstone griddle to medium-high (about 400°F). A test for temperature is to sprinkle water on the surface—if it dances and evaporates quickly, you’re ready to cook!
  3. Add sliced onions and bell peppers to one side of the griddle. Sauté for 6-9 minutes until charred and tender.
  4. Move to the other side and cook marinated chicken for 3-4 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  5. Warm tortillas directly on the griddle for about 1 minute to make them soft and pliable.
