Ingredients

  • 1 pound Chicken Thighs Boneless, skinless, cut into strips.
  • 1/2 cup Soy Sauce Low sodium preferred.
  • 1/4 cup Honey
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Cornstarch
For the Noodles and Vegetables
  • 8 ounces Noodles Such as udon or ramen.
  • 1 cup Bell Peppers Sliced, any color.
  • 1 cup Broccoli Floret
  • 2 cloves Garlic Minced.
  • 1 tablespoon Sesame Oil For cooking.

Method
 

Preparation
  1. Prepare the ingredients by cutting the chicken and vegetables, and measuring out the sauce components.
Cooking Chicken
  1. In a Dutch oven, heat sesame oil over medium heat. Add chicken and cook until browned, about 5-7 minutes.
Making Sauce
  1. In a bowl, mix soy sauce, honey, rice vinegar, and cornstarch. Pour over the chicken.
Cooking Noodles
  1. In a separate pot, cook noodles according to package instructions. Drain and set aside.
Combining Ingredients
  1. Add bell peppers, broccoli, and garlic to the chicken. Stir together and cook until vegetables are tender.
  2. Add cooked noodles to the chicken and stir well to combine.
Serving
  1. Serve hot, garnished with sesame seeds or green onions if desired.
