  • 1 tsp Smoked Paprika or regular paprika
  • 1 tsp Kosher Salt adjust as needed
  • 2 tbsp Extra-Virgin Olive Oil or avocado oil for taste swap

Step-by-Step Instructions for Chickpea Meatballs
  1. Prepare the Chickpea Mixture: Drain and rinse the chickpeas, then place them in a food processor. Add breadcrumbs, eggs, parsley, nutritional yeast, and seasonings. Pulse until mostly smooth, retaining some texture.
  2. Shape the Meatballs: Use a cookie scoop to portion out 1 to 2 tablespoon balls, yielding about 14 to 16 meatballs. If too wet, add more breadcrumbs and roll into balls.
  3. Heat the Skillet: Heat olive oil over medium heat until shimmering. Add meatballs, cook for 6 to 8 minutes, turning occasionally until golden brown all around.
  4. Alternate Cooking Methods: Preheat oven to 375°F or set air fryer to the same. Bake meatballs for 18 to 20 minutes, flipping halfway; or air fry for 11 to 14 minutes until golden.
  5. Cool and Serve: Let meatballs cool for a few minutes on a plate. Serve with marinara sauce, in pita with tzatziki, or on salads.
