- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium heat, add the ground beef and chopped onion. Sauté for 5–7 minutes until browned and the onion is translucent.
- Stir in minced garlic, taco seasoning, and ½ cup of enchilada sauce. Fold in diced green chiles, black beans, and corn. Simmer for another 2–3 minutes.
- Spread ½ cup of enchilada sauce at the bottom of the greased baking dish. Place ¼ cup of beef mixture in each tortilla, sprinkle with cheese, and roll tightly.
- Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle shredded cheese on top.
- Bake uncovered for 20–25 minutes until the cheese is melted and bubbly. Broil for an additional 1–2 minutes for a crispy top if desired.
- Remove from the oven, let cool for a few minutes, and serve with your favorite toppings.
