  • 2 cloves Garlic Minced
  • 1 packet Taco Seasoning Store-bought or homemade
  • 1 can (4 oz) Diced Green Chiles For mild heat
  • 1 can (15 oz) Black Beans Optional
  • 1 cup Corn Optional
For the Assembly
  • 8 units Tortillas Flour or warmed corn
  • 2 cups Enchilada Sauce Store-bought or homemade
  • 2 cups Shredded Cheese Mexican blend, cheddar, or Monterey Jack

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, add the ground beef and chopped onion. Sauté for 5–7 minutes until browned and the onion is translucent.
  3. Stir in minced garlic, taco seasoning, and ½ cup of enchilada sauce. Fold in diced green chiles, black beans, and corn. Simmer for another 2–3 minutes.
  4. Spread ½ cup of enchilada sauce at the bottom of the greased baking dish. Place ¼ cup of beef mixture in each tortilla, sprinkle with cheese, and roll tightly.
  5. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle shredded cheese on top.
  6. Bake uncovered for 20–25 minutes until the cheese is melted and bubbly. Broil for an additional 1–2 minutes for a crispy top if desired.
  7. Remove from the oven, let cool for a few minutes, and serve with your favorite toppings.
