Step-by-Step Instructions
  1. In a medium bowl, drain and rinse the chickpeas, then mash them until coarsely blended. Stir in chopped bell peppers, cucumbers, and red onion. Add Greek yogurt or dressing and mix well. Season with salt and pepper.
  2. Preheat a skillet on medium heat. Spread the chickpea salad mixture onto slices of bread, topping half with mozzarella cheese. Create sandwiches.
  3. Grill the sandwiches in the preheated skillet for about 3-5 minutes on one side until golden brown. Flip and cook until the cheese melts and the other side is golden.
