- Preheat your Blackstone griddle to medium heat, around 350°F, for about 10 minutes.
- Season the salmon fillets with salt and pepper on all sides and let sit for 10-15 minutes.
- Cut a lemon in half; slice one half into ⅛-inch rounds and set aside.
- Add cooking oil to the preheated griddle and char the lemon halves and slices for about 1 minute.
- Flip the lemon slices after 1 minute and char the other side for an additional minute.
- Place the seasoned salmon fillets skin side up onto the griddle and cook for approximately 5 minutes.
- Flip the salmon fillets skin side down, squeeze juice from the charred lemon half over the fillets, and lay charred lemon slices on top.
- Grill for an additional 7-10 minutes until the internal temperature reaches 145°F.
- Remove grilled salmon from the griddle, let it rest for a few minutes, then serve.
