Step-by-Step Instructions
  1. Preheat your Blackstone griddle to medium heat, around 350°F, for about 10 minutes.
  2. Season the salmon fillets with salt and pepper on all sides and let sit for 10-15 minutes.
  3. Cut a lemon in half; slice one half into ⅛-inch rounds and set aside.
  4. Add cooking oil to the preheated griddle and char the lemon halves and slices for about 1 minute.
  5. Flip the lemon slices after 1 minute and char the other side for an additional minute.
  6. Place the seasoned salmon fillets skin side up onto the griddle and cook for approximately 5 minutes.
  7. Flip the salmon fillets skin side down, squeeze juice from the charred lemon half over the fillets, and lay charred lemon slices on top.
  8. Grill for an additional 7-10 minutes until the internal temperature reaches 145°F.
