Preparation Steps
  1. In a medium bowl, whisk together olive oil, minced garlic, fresh rosemary, thyme, oregano, lemon zest, salt, and black pepper until smooth.
  2. Place the chicken thighs in a shallow dish, skin-side up, and pour the marinade over. Coat evenly and refrigerate for 15–20 minutes.
  3. Preheat your oven to 400°F (200°C) while the chicken is marinating.
  4. Heat a drizzle of olive oil in an ovenproof skillet over medium-high heat. Sear the chicken thighs skin-side down for 4–5 minutes until golden-brown.
  5. Transfer the skillet to the preheated oven and bake for 20–25 minutes until the internal temperature reaches 165°F (75°C).
  6. Remove from oven, let rest for 5 minutes, then sprinkle with parsley and Parmesan before serving.
