For the Meatloaf
  • 1 pound Ground Turkey choose a lean blend like 93/7
  • 2 tablespoons Butter can substitute with ghee or olive oil
  • 1 cup Yellow Onion finely diced
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh Thyme minced
  • 2 large Eggs lightly beaten
  • 1 cup Seasoned Breadcrumbs or almond flour for gluten-free
  • 1/4 cup Fresh Parsley minced, optional
  • 1 teaspoon Kosher Salt adjust to taste
  • 1/2 teaspoon Fresh Ground Pepper adjust to taste
  • 2 tablespoons Worcestershire Sauce or coconut aminos for Whole30
  • 1/2 cup Ketchup opt for sugar-free version
For the Glaze
  • 1/2 cup Balsamic Vinegar or apple cider vinegar in a pinch
  • 2 tablespoons Brown Sugar packed, or coconut sugar for Whole30

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt 2 tablespoons of butter in a skillet over medium heat, then add the finely diced yellow onion and sauté for about 4 minutes.
  3. Add minced garlic and fresh thyme, cooking for an additional minute. Remove from heat and let cool.
  4. In a large bowl, combine ground turkey, beaten eggs, breadcrumbs, parsley, salt, pepper, and Worcestershire sauce. Fold in the cooled onion mixture carefully.
  5. Divide the mixture into 8 portions and shape into small loaves on the baking sheet.
  6. In a bowl, whisk together ketchup, balsamic vinegar, and brown sugar. Brush half over the loaves.
  7. Bake for 15 minutes, then brush with remaining glaze and return to the oven for another 5-10 minutes.
  8. Let the meatloaf rest for 5-10 minutes before serving.
