- In a mixing bowl, combine 1/4 cup of mayonnaise, 2 tablespoons of sweet pickle relish, and 1 teaspoon of chili sauce. Stir until blended and set aside.
- Preheat a griddle over medium-high heat. Add drained sauerkraut and pastrami, stirring regularly until warm and slightly crisped, about 4-5 minutes.
- Butter one side of each slice of rye bread with 2 tablespoons of softened butter. Lay the slices butter-side down on a clean cutting board.
- On two bread slices, layer Swiss cheese, hot pastrami, and sauerkraut mixture. Top with another cheese slice and cover with remaining bread, buttered sides facing out.
- Place sandwiches on the griddle and grill for about 3-4 minutes until golden and crispy. Flip carefully and grill the other side for another 3-4 minutes until cheese melts.
