Ingredients

For the Sandwich
  • 8 ounces Pastrami Use high-quality pastrami for the best flavor and tenderness.
  • 1 cup Sauerkraut Make sure it's well-drained to prevent sogginess.
  • 4 slices Rye Bread Freshly-baked rye provides the ideal structure and flavor.
  • 4 slices Swiss Cheese Melts beautifully and complements the pastrami.
  • 2 tablespoons Butter Essential for grilling; adjust based on preference.
For the Dressing
  • 1/4 cup Mayonnaise Forms the base of the homemade Russian dressing.
  • 2 tablespoons Sweet Pickle Relish Adds a touch of sweetness.
  • 1 teaspoon Chili Sauce Introduces a bit of heat and flavor.

Equipment

  • Griddle or skillet

Method

Step‑by‑Step Instructions
  1. In a mixing bowl, combine 1/4 cup of mayonnaise, 2 tablespoons of sweet pickle relish, and 1 teaspoon of chili sauce. Stir until blended and set aside.
  2. Preheat a griddle over medium-high heat. Add drained sauerkraut and pastrami, stirring regularly until warm and slightly crisped, about 4-5 minutes.
  3. Butter one side of each slice of rye bread with 2 tablespoons of softened butter. Lay the slices butter-side down on a clean cutting board.
  4. On two bread slices, layer Swiss cheese, hot pastrami, and sauerkraut mixture. Top with another cheese slice and cover with remaining bread, buttered sides facing out.
  5. Place sandwiches on the griddle and grill for about 3-4 minutes until golden and crispy. Flip carefully and grill the other side for another 3-4 minutes until cheese melts.
  6. Drizzle homemade dressing over the sandwiches or serve on the side. Slice in half and serve with potato chips or pickles.

Notes

High-quality pastrami makes a difference; avoid sogginess by draining sauerkraut, and allow sandwiches to rest before slicing.
