- Melt butter in a skillet over medium heat, add diced potatoes and fry for 15-20 minutes until golden and crispy. Season with salt and pepper.
- Stir in grated onion and cook for an additional minute. Remove from heat and let cool.
- Combine cooled potato-onion mixture with cheddar cheese, cream, mustard, and parsley in a bowl. Mix until well blended.
- Roll out puff pastry to 1/8-inch thickness, cut into four rectangles. Fill with mixture, fold over, and crimp to seal.
- Preheat oven to 200°C (390°F), arrange pasties on a baking tray, brush with egg, cut steam vents, and bake for 15-20 minutes until golden.
