  • 300 g Large White Potato Diced.
  • 150 g Large Onion Grated.
  • 1 tbsp Butter For frying filling.
  • 1 tsp Dijon Mustard Can substitute with English mustard.
  • 1 tsp Fresh Parsley Finely diced, optional.
  • 1 Beaten Egg For egg wash.
  • Salt & Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Melt butter in a skillet over medium heat, add diced potatoes and fry for 15-20 minutes until golden and crispy. Season with salt and pepper.
  2. Stir in grated onion and cook for an additional minute. Remove from heat and let cool.
  3. Combine cooled potato-onion mixture with cheddar cheese, cream, mustard, and parsley in a bowl. Mix until well blended.
  4. Roll out puff pastry to 1/8-inch thickness, cut into four rectangles. Fill with mixture, fold over, and crimp to seal.
  5. Preheat oven to 200°C (390°F), arrange pasties on a baking tray, brush with egg, cut steam vents, and bake for 15-20 minutes until golden.
