- Finely chop the sweet onions and mince the garlic cloves. Set aside.
- Heat a large skillet over medium-high heat, add oil, and sear the beef chuck roast for 4–5 minutes on each side.
- In the same skillet, sauté the chopped onions and minced garlic for 3–4 minutes until translucent.
- Transfer the seared beef into a slow cooker, layer sautéed onions and garlic on top, and pour in beef broth.
- Sprinkle the smoked paprika, cumin, salt, and pepper over the beef and cover the slow cooker.
- Once cooking time is up, remove beef from the slow cooker and shred with two forks. Mix in BBQ sauce.
- Toast the soft buns if desired, then fill each with the pulled beef mixture and add toppings.
- Serve on a platter or individual plates and enjoy your Pulled Beef Sandwiches.
