- Heat the vegetable oil in a large wok or skillet, add minced garlic, and sauté until lightly golden.
- Add shrimp and cook until pink and opaque, then remove from wok.
- Pour in more oil if needed, add remaining garlic and white parts of green onions, sauté, then scramble eggs.
- Add jasmine rice and thawed peas and carrots, stir-fry for 2-3 minutes.
- Return shrimp, add soy sauce, oyster sauce, sesame oil, and black pepper, stir-fry for another 2 minutes.
- Taste and adjust seasoning, garnish with green onion tops before serving.
