  • 4 cups chilled jasmine rice ensures fluffy grains

  • 1 pound peeled and deveined shrimp can swap with chicken or tofu
For the Aromatics
  • 4 cloves garlic fresh is best
  • 2 scallions green onions both green and white parts
For the Vegetables
  • 1 cup frozen peas and carrots thawed before cooking
For the Sauces
  • 3 tablespoons soy sauce can use tamari for gluten-free version
  • 1 tablespoon oyster sauce optional for vegetarian tweak
For the Flavor Boost
  • 1 teaspoon toasted sesame oil can be omitted
  • to taste black pepper essential for seasoning

  • 2 eggs whisk until just set

Method
 

Step-by-Step Instructions
  1. Heat the vegetable oil in a large wok or skillet, add minced garlic, and sauté until lightly golden.
  2. Add shrimp and cook until pink and opaque, then remove from wok.
  3. Pour in more oil if needed, add remaining garlic and white parts of green onions, sauté, then scramble eggs.
  4. Add jasmine rice and thawed peas and carrots, stir-fry for 2-3 minutes.
  5. Return shrimp, add soy sauce, oyster sauce, sesame oil, and black pepper, stir-fry for another 2 minutes.
  6. Taste and adjust seasoning, garnish with green onion tops before serving.
