Step-by-Step Instructions
  1. Start by patting the chicken dry and season with salt and pepper.
  2. In a skillet, heat olive oil and sear the chicken for 3-4 minutes on each side.
  3. Transfer the chicken to the slow cooker and scatter onion and garlic around.
  4. Sprinkle thyme, oregano, lemon zest, and juice over chicken, then add broth.
  5. Cover and set to cook on LOW for 4.5 to 6 hours or HIGH for 2 to 3 hours.
  6. For a thicker sauce, mix cornstarch and water, then whisk into the cooking liquid.
  7. Taste the sauce and adjust with lemon juice. Garnish with parsley and serve.
