  • 2 cups Baby Spinach can use other greens like kale

Step-By-Step Instructions

  3. Cook the ground turkey sausage in a skillet over medium heat for 7-10 minutes.
  4. Reduce the oven temperature to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil spray.
  5. Whisk together eggs, milk, smoked paprika, salt, and pepper until light and frothy, then fold in cooked sausage, roasted sweet potatoes, and spinach.
  6. Pour the mixture into the baking dish and crumble goat cheese on top.
  7. Bake for 30-35 minutes, checking for doneness with a knife.
  8. Allow to cool for 5-10 minutes before slicing and serving.
