Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the olive oil, diced shallot, minced garlic, chopped parsley, rosemary, thyme, lemon juice, lemon zest, salt, and pepper. Whisk until well blended.
  2. Transfer the chicken thighs to a large Ziploc bag or bowl. Pour the marinade over the chicken and seal tightly. Marinate in the refrigerator for at least 2 hours or overnight.
  3. Preheat your grill to medium-high heat about 20 minutes before cooking.
  4. Remove the chicken from the refrigerator. Drain excess marinade and brush the thighs with olive oil, seasoning with salt and pepper.
  5. Grill the chicken thighs for about 10-12 minutes per side, turning occasionally, until they reach an internal temperature of 165°F.
  6. Remove from the grill and let rest for a few minutes. Serve with fresh lemon slices and herbs for garnish.
