- Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- Combine diced sweet potatoes and sliced bell peppers in a bowl with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat and spread on the sheet pan.
- Whisk together BBQ sauce, honey, apple cider vinegar, and onion powder in a small bowl.
- Place chicken breasts on the sheet pan among the veggies and brush half of the BBQ sauce mixture over them.
- Bake in the preheated oven for about 20 minutes.
- Remove from oven, brush remaining sauce over chicken, and bake for an additional 10-15 minutes until done.
- Let the chicken rest for 5 minutes before serving.
