Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. Combine diced sweet potatoes and sliced bell peppers in a bowl with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat and spread on the sheet pan.
  3. Whisk together BBQ sauce, honey, apple cider vinegar, and onion powder in a small bowl.
  4. Place chicken breasts on the sheet pan among the veggies and brush half of the BBQ sauce mixture over them.
  5. Bake in the preheated oven for about 20 minutes.
  6. Remove from oven, brush remaining sauce over chicken, and bake for an additional 10-15 minutes until done.
  7. Let the chicken rest for 5 minutes before serving.
