- Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray.
- In a small bowl, mix black pepper, Italian seasoning, onion powder, garlic powder, and smoked paprika.
- Wash and chop russet potatoes, slice the onion, and cut broccoli into smaller florets. Arrange in a single layer on the baking sheet.
- Drizzle vegetables with olive oil and sprinkle half of the seasoning mixture over them, tossing to coat.
- Mix chicken thighs with remaining seasoning and garlic Parmesan sauce in a separate bowl until well coated.
- Place the seasoned chicken on top of the vegetables on the baking sheet, ensuring space between pieces.
- Bake for 35-40 minutes until chicken is at 185°F (85°C). Broil for 1-2 minutes for a crispier skin.
- Sprinkle freshly grated Parmesan cheese over the chicken and vegetables before serving.
