Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray.
  2. In a small bowl, mix black pepper, Italian seasoning, onion powder, garlic powder, and smoked paprika.
  3. Wash and chop russet potatoes, slice the onion, and cut broccoli into smaller florets. Arrange in a single layer on the baking sheet.
  4. Drizzle vegetables with olive oil and sprinkle half of the seasoning mixture over them, tossing to coat.
  5. Mix chicken thighs with remaining seasoning and garlic Parmesan sauce in a separate bowl until well coated.
  6. Place the seasoned chicken on top of the vegetables on the baking sheet, ensuring space between pieces.
  7. Bake for 35-40 minutes until chicken is at 185°F (85°C). Broil for 1-2 minutes for a crispier skin.
  8. Sprinkle freshly grated Parmesan cheese over the chicken and vegetables before serving.
