Ingredients
  

For the Marinade
  • 2 pieces boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tbsp orange zest fresh
  • 1/2 cup orange juice freshly squeezed
  • 1/4 cup soy sauce can use low-sodium
  • 2 tbsp honey for sweetness
  • 2 cloves garlic minced or grated
  • 1 tbsp ginger freshly grated
  • 2 tbsp olive oil or any neutral oil
  • 1 tsp salt to taste
  • 1 tsp black pepper freshly ground
For Grilling
  • 4 pieces wooden skewers soaked in water for 20 minutes
  • 4 pieces metal skewers greased lightly

Method
 

Preparation
  1. Zest and juice one fresh orange into a mixing bowl.
  2. Mince two cloves of garlic and grate a piece of ginger into the bowl.
  3. Add 1/4 cup of soy sauce, 2 tbsp of honey, 2 tbsp of olive oil, a pinch of salt, and freshly ground black pepper. Whisk until well combined.
  4. Cut the chicken into 1-inch cubes and add to the marinade, stirring to coat well. Cover and refrigerate for at least 30 minutes.
  5. Soak wooden skewers in water for 20 minutes or grease metal skewers.
  6. Thread marinated chicken onto skewers, leaving a gap between pieces.
  7. Preheat grill to medium-high heat (375°F to 400°F).
  8. Grill skewers for about 6-7 minutes on each side until golden brown and chicken reaches an internal temperature of 165°F.
  9. Remove skewers from grill and let rest for 5 minutes before serving.

Notes
