Preparation
- Zest and juice one fresh orange into a mixing bowl.
- Mince two cloves of garlic and grate a piece of ginger into the bowl.
- Add 1/4 cup of soy sauce, 2 tbsp of honey, 2 tbsp of olive oil, a pinch of salt, and freshly ground black pepper. Whisk until well combined.
- Cut the chicken into 1-inch cubes and add to the marinade, stirring to coat well. Cover and refrigerate for at least 30 minutes.
- Soak wooden skewers in water for 20 minutes or grease metal skewers.
- Thread marinated chicken onto skewers, leaving a gap between pieces.
- Preheat grill to medium-high heat (375°F to 400°F).
- Grill skewers for about 6-7 minutes on each side until golden brown and chicken reaches an internal temperature of 165°F.
- Remove skewers from grill and let rest for 5 minutes before serving.
