- In a large mixing bowl, combine your ground beef, breadcrumbs, milk, finely chopped onion, minced garlic, eggs, Worcestershire sauce, salt, black pepper, smoked paprika, and dried oregano. Gently mix using your hands or a spatula until just combined.
- Shape the meat mixture into a loaf shape, about 8 inches long. Line your slow cooker with parchment paper or foil to avoid sticking.
- Carefully place the shaped meatloaf into the slow cooker and spread 1/4 cup of ketchup evenly over the top.
- Cover the slow cooker with its lid and set to cook on low heat for 6 hours or on high for 3 to 4 hours.
- In the last moments of cooking, whisk together the remaining glaze ingredients: ketchup, brown sugar, and Dijon mustard. Spread this mixture over the top of the meatloaf and cook for an additional 15 to 20 minutes on high.
- Once cooked, turn off the slow cooker and let the meatloaf rest for about 10 minutes before slicing.
